A quick and warming recipe

Ingredients

Oil for frying AND 1 tablespoon of curry powder
Tinned or fresh tomatoes + tomato puree
1 onion, 1 stick of celery & 1 large carrot
Veg such as courgette, potatoes, pepper, spinach
2 cups of rinsed red or green lentils

Method

Chop your onion and celery

Cut up the carrot and any other vegetables you are using – make sure everything is washed first.

In a pan add oil and gently heat.

Add in the chopped onions and celery and fry gently for a few minutes.

Add in the curry powder and stir – do not let it burn – cook for a few minutes.

Add in tomatoes and tomato paste.

Stir in the lentils and any other vegetables you are using ( not the spinach) and top with water.

Stir and allow to simmer for 20-30 minutes.

Taste and add salt and pepper.

Add in spinach or any other leaves, stir and serve with rice and enjoy!
