Strawberry, choc chip and yoghurt bark


Ingredients
- 700ml greek yoghurt
- 60ml honey (or maple syrup)
- 1 tsp vanilla extract
- 10 – 12 strawberries, sliced
- 50g mini choc chips
Method
- Line a large baking tray (about 25cm x 38cm) with greaseproof paper.
- Stir the yoghurt, honey (or maple syrup) and vanilla extract together in a bowl and then spread on the lined baking tray til it covers the base evenly.
- Place the sliced strawberries on top evenly and then sprinkle over the choc chips.
- Place in the freezer and leave for at least 2 hours and then you can take out to score the bark into pieces and pop back into the freezer until completely form. This will help when serving.
- To serve, break or cut into pieces.
Top tip! You can experiment with different toppings – dried fruits, berries, chopped nuts, coconut or granola for examples!
