strawberry, choc chip and yoghurt bark
Ingredients
  • 700ml greek yoghurt
  • 60ml honey (or maple syrup)
  • 1 tsp vanilla extract
  • 10 – 12 strawberries, sliced
  • 50g mini choc chips
Method
  1. Line a large baking tray (about 25cm x 38cm) with greaseproof paper.
  2. Stir the yoghurt, honey (or maple syrup) and vanilla extract together in a bowl and then spread on the lined baking tray til it covers the base evenly.
  3. Place the sliced strawberries on top evenly and then sprinkle over the choc chips.
  4. Place in the freezer and leave for at least 2 hours and then you can take out to score the bark into pieces and pop back into the freezer until completely form. This will help when serving.
  5. To serve, break or cut into pieces.

Top tip! You can experiment with different toppings – dried fruits, berries, chopped nuts, coconut or granola for examples!
