Loaded scrambled eggs


Ingredients – serves 4
- 1 or 2 tbsp vegetable or olive oil
- 12 eggs
- salt and pepper
Add in whatever you fancy! Some suggestions: 100g cheese of your choice / two good handfuls of fresh chopped herbs – dill, basil, parsley, rosemary, sage, chives etc / peppers / chilli / fresh tomatoes / onions / spinach / mushrooms
Method
- If you are using onions, chillies or peppers (or any veg that needs cooking), put a frying pan on a medium heat, add 1 tbsp of oil and then add them. cook for 3 – 4 minutes until they begin to soften. when cooked, set them aside for later.
- Turn down the heat to low and add another tbsp of oil before cracking in the eggs. (You can use butter if you have it).
- Using a rubber or wooden spatula (so not to scratch the pan) keep moving the eggs round the pan to break them up and stop them sticking. Cook to your liking (usually around 3 – 4 minutes.
- Add in all your other ingredients and give everything a good mix, cook for another minute rto make sure everything is hot, season and serve (on toasted bread or on it’s own).
